Children's Nutrition: Cheesy Pumpkin Scones

Cheesy Pumpkin Scones

Tip: Great way of getting vegetables and some protein via the cheese into your little cherub.

Ingredients

  • 2½ cups (375g) of self-raising wholemeal flour
  • 35g of butter
  • ¼ cup of grated pumpkin
  • ¼ cup of grated cheddar cheese
  • 1 cup of milk (soy, cows or oat)

Preparation

  • Place the flour into a large bowl.
  • Cut the butter into small squares and add to the flour.
  • Rub the butter into the flour until it resembles fine breadcrumbs.
  • Add the pumpkin and cheese and mix together.
  • Make a well in the centre of the mix and add the milk.
  • Using a knife, mix ingredients. The dough should be slightly tacky but be coming away from the sides of the bowl.
  • Flour a board and knead the dough into a ball.
  • Flatten out the dough so that it is about 3-4cms high and using a cutter or interesting shape cut out the scones.
  • Place the scones on a greased or floured baking tray.
  • Bake in a hot oven for 15 minutes until scones make a dull sound when tapped with your finger.
  • Serve when cooled as is or with a little butter.

Makes about 24 mini scones.

Really, this is limited to your imagination! We also love sweet potato and cheese scones; zucchini, pumpkin and cheese scones; and cheese and bacon scones.
