Women's Corner: Recipes

Below we feature the winning recipes from our recent competition:


Golden Syrup Dumplings

Preparation Time: 15 minutes

Cooking Time: 25 minutes

Ingredients (serves 4):

  • 1 1/2 cups self-raising flour
  • 2 1/2 tbs butter, chilled .
  • 1/2 cup thin cream .
  • 1 tbs golden syrup .
  • 1 egg .
  • Custard or cream .

Sauce

  • 2 cups water .
  • 1/2 cup golden syrup .
  • 1/2 cup brown sugar .
  • 2 tbs butter Method
  1. Sift the flour into a large bowl. Use your fingertips to rub in the butter until the mixture resembles fine breadcrumbs. Make a well in the centre.
  2. Combine the cream, golden syrup and egg. Add to the dry ingredients and use a wooden spoon to mix until well combined.
  3. To make the sauce, place the water, golden syrup, sugar and butter in a large saucepan. Stir over medium heat until sugar dissolves. Increase heat to high and bring to the boil, then reduce heat to medium.
  4. Add heaped dessertspoons full of dough to the sauce. Simmer, covered, for 15-20 minutes or until a skewer inserted in the centre of the dumplings comes out clean.
  5. Divide the dumplings among serving bowls. Spoon the sauce over and serve immediately with cream or custard.

Curried Peanut Chicken

  • 1 onion roughly chopped
  • 1 clove garlic, crushed
  • 2 teaspoons curry powder
  • 2 chicken breasts, thinly sliced in strips
  • 1 - 2 cups broccoli, chopped
  • 1 - 2 cups carrots thinly sliced or grated
  • 2 teaspoons smooth peanut butter (or crunchy if preferred)
  • 1/2 cup water (approximately)

Heat frypan or wok, add a little oil and stirfry onion, garlic and curry powder for about 3 minutes or until onion is soft. Add chicken in small quanitites and stir fry until brown. Add broccoli and carrots and allow them to cook a little Add peanut butter and water. Stir together and cook for a further 3 minutes

Serving suggestions: on rice or use Mexican tortillas and make into a wrap You can also add other vegetables if you like
